Black bean freezer breakfast burritoes

Ingredients

  • 1 package extra-firm tofu, drained
  • 1 medium onion or ⅓ large onion, diced
  • 2–3 cloves garlic, minced or grated
  • 1 can diced potato
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • ¼ cup nutritional yeast
  • 2 teaspoons chili powder
  • 1½ teaspoon ground cumin
  • 1 teaspoon salt
  • ¾ teaspoon ground turmeric
  • ½ teaspoon black pepper
  • 1 small bunch fresh spinach, stems removed and chopped
  • Several tortillas

Instructions

  1. Cook onion for 5-7 minutes. Add garlic and cook for 2 more minutes.
  2. Add potato and crumbled tofu. Stir in chili powder, cumin, black pepper, salt, turmeric, and nutritional yeast. Cook for 5 minutes.
  3. Add black beans and tomatoes. Cook for 5 minutes.
  4. Add spinach and cook until wilted.
  5. Let cool.
  6. Scoop filling into tortillas. Roll into burritoes. Wrap and freeze, or refrigerate (for up to a week).
