Cooking today: Ultimate vegan breakfast sandwiches
So today I made this breakfast sandwich (well, I made four of them). I’ve had it before, but I’ve never tried making the vegan egg yolk recipe that the same blogger also posted, and I found out the local grocery store does have kala namak, so I figured… why not.
And it was pretty great! In the past I’ve just stuck a Just Egg patty on top and called it a day, but I really like the fake egg yolk. The only thing is the egg yolk recipe makes way more than you need for topping these sandwiches. Which isn’t an issue? I can use it for something else later? Just something to keep in mind.
