Cooking yesterday: Pineapple fried rice

Another recipe from It Doesn’t Taste Like Chicken. I had leftover rice, I had everything else (or so I thought), so why not?

Well, I didn’t have curry powder. I misread it as “chili powder” when I was skimming the ingredients, and only noticed when I had everything else out on the counter. The internet told me I could substitute equal amounts of coriander, cumin, and turmeric, so I tried that.

But I only had coriander seed. (My father-in-law keeps the weirdest shit in his cupboards but I’m not complaining.) So I tried crushing it up and it didn’t turn out so great. The taste was pretty overpowering and there were little chunks of seed in many bites.

Aside from that, though, it was pretty good? Lesson learned for next time.
